Nut-free, Gluten-free BALT Wraps

These tidy snacks remind me of summer. Sigh. The BALT in these wraps stands for bacon, avocado, lettuce and turkey. I felt like that might make for a long title. These are a crafty but straightforward alternative to a club sandwich with the same amazing texture juxtaposition of slippery avocado, chewy bacon, and a blanket of turkey all wrapped in snappy lettuce.

BALT Wraps

Servings: 4

Prep Time: 5 minutes (if bacon is pre-cooked)

Ingredients

  • 4 slices of bacon, cooked and cooled

  • A couple smears of Wholly Guacamole (or 1/2 avocado, sliced thin)

  • 4 large butter or Boston lettuce leaves, rinsed and trimmed of tough bottom stem

  • 1/2 large ripe tomato, quartered and sliced

  • 4 slices oven roasted turkey breast (I like Applegate Farms because of the lack of additives, preservatives and sugar)

  • Mustard (I like Gulden’s spicy brown mustard)

Spread out your lettuce leaves for assembly. Place a slices of turkey down the middle rib of each leaf. Layer the avocado and tomato on either side of the bacon, then stack a slice of bacon on top of this. Squeeze your desired amount of mustard across the top of each unrolled wrap. Plate, serve and imagine laying poolside at your favorite beach destination. Perhaps with a nice, cold beverage.

Other options: Use ham, chicken or roast beef instead of (or in addition to!) turkey. If you do dairy, add some sliced cheese.
