Paleo Frozen Banana Dessert

If you live in the U.S., odds are good that it’s hot where you live right now. According to the national weather map I’ve consulted for today’s temperatures, the only exception would be Alaska (duh), and Montana, where it is in the 50s.

San Francisco is famous for it’s cool, foggy Augusts. To be honest, I was rather looking forward to that after moving to the city from our sweltering Palo Alto second floor apartment that lacked air conditioning. But no. It is 10 a.m. and 85 degrees. Go figure.

To combat the heat wave, I’m tempted to eat all the ice cream in town. But then my stomach reminds me that this is a terrible idea for me and everyone who has to be in close contact with me for the next 12 hours. So rather than lacto-bloat myself into a stupor, I propose this (deceivingly horribly photographed), cool and equally satisfying banana-based treat. I might make this three times today just to keep my body temperature in a normal range.

Paleo Frozen Banana Dessert

Serves one


1 frozen banana (you can use unfrozen if needed, just add a few ice cubes)

1/2 teaspoon vanilla extract

~3/4 cup coconut milk (I like the So Delicious unsweetened vanilla variety, but any will do)


For equipment, I use a little Ninja single-serving thing. A Magic Bullet or Vitamix or equivalent will work. If you only have a large pitcher for your blender, consider making a couple servings at once so there’s enough in there to blend.

Put all of the above into a blender and blend on high until smooth. Use less coconut milk or more banana if you want it to be more like scoopable ice cream. Use more coconut milk if you want it to be more like a milkshake.

Easiest cold treat ever with no added sugar. You are welcome.
